"This easy-to-make broccoli bake, topped with crunchy Ritz crackers, is perfect for both special occasions and weeknight dinners."

Main Ingredients

  • - Cooking spray
  • 1/2 c. (1 stick) - Butter
  • 1 (15-oz.) can - Cream of mushroom soup
  • 2 large, beaten - Eggs
  • 1 c. - Mayonnaise
  • 2 c. - Shredded cheddar
  • 3/4 c. - Freshly grated Parmesan
  • 1 tbsp. - Dijon mustard
  • to taste - Kosher salt
  • to taste - Freshly ground black pepper
  • 1 lb. - Frozen chopped broccoli, defrosted
  • - Crushed RITZ Crackers
  • - Freshly chopped parsley, for garnish
  1. Step 1 Fire up your oven to 350º and get a casserole dish ready with cooking spray. Melt the butter in a big saucepan. Add in soup, eggs, mayo, cheddar, Parmesan, and mustard. Season with salt and pepper.
  2. Step 2 Lay the broccoli on the bottom of your dish. Drench it with the saucepan mix and cover it all with crushed Ritz crackers.
  3. Step 3 Pop it in the oven until golden and bubbly, around 30 minutes.
  4. Step 4 Finish it off with some parsley on top before serving.
